Special diet cakes

After getting a request for a birthday cake made with more healthful ingredients, I've been really looking into recipes using alternative flours, sweeteners, etc. To my surprise, there are an awful lot out there! As much as I appreciate products made with whole wheat flour, I wasn't sure if a cake made with it would be coarse or dense--and then I discovered the existence of whole wheat pastry flour, which is finer and should result in a lighter texture. And there are endless ways to sweeten foods without resorting to good ol' refined white sugar--molasses, honey, fruit, you name it. I am really excited to try out some of the new recipes and products I've come across. Special diets is a subject dear to me, as my daughter has a severe peanut allergy. I've grown very accustomed to thoroughly reading food labels because for her, and for many other people, it really is a matter of life and death. So whether you need a cake free of very specific ingredients or you would just like one that you can feel good about eating, I'm sure there are options and I'd be happy to explore them with you!
